I have purchased watches from both Steinhart and Gnomon and they were each good experiences. The times I purchased from Steinhart the shipping was 2 days for a couple watches and 3 days once. You’re right - the Steinhart does stick out more on its underside. I think the casebacks are about the same thickness, but the Steinhart caseback is more saucer-like (as opposed to the Tudor which has a pretty flat caseback) so that adds to the feeling that the watch sits further off the wrist. Steinhart make submariner-a-likes, whereas Tudor generally make watches that don't look like Rolex models. They have stand-out design features such as the snowflake hands and the materials in the latest models are as good as you'll find at any price point.
Steinhart uses automatic Sellita calibers, which are high quality and used by many luxury brands. IWC, Hublot, Raymond Weil, and Sinn have all used Sellita movements or bases. Steinhart also uses Swiss workhorse ETA movements. ETA is known for its accuracy, craftsmanship, and reliability. However, my Steinharts are consistent so you could probably have a watchmaker regulate it closer to 1 second per day. I also think my Tudor Pelagos (in house movement) would stand up slightly better to shocks than my Steinharts because the Tudor has a full balance bridge and freesprung balance.
